Party food idea – Tasty potato bites with rosemary
Now you might be thinking, why would I want to be doing ANY cooking on the day of a party? Well the great thing about these little bites is that you can make them days (even weeks) in advance of the party and then simply shake into a baking tray 30 minutes before serving. Once cooked, simply distribute into treat tubs or similar container and you’re done. Simple!
Here’s how (watch out for our Party tips to help you along your way)
What you need to fill approx 6-8 treat tubs:
- 4 Large potatoes (Party tip: use Maris Piper as they work well for this method of cooking)
- 5-6 Tablespoons olive oil
- 5 sprigs fresh rosemary
- Sprinkle of plain flour
- Sprinkle of Rock salt
- Freezer bag
Chop the potatoes with skins on, into smallish cubes (@ 2cm x 2cm). Par boil the potatoes for 5-6 mins until ever so slightly soft on the outside. Drain and lightly toss in flour
Pre heat the oven to 200°C and add the potatoes to a large baking tray containing the olive oil (Party tip: pre heat the tray with the oil for 5 minutes for extra crispiness!). Sprinkle with the rosemary and rock salt
Cook in the oven for about 30 minutes until lightly browned and crispy (Party tip: if you are going to freeze and re-cook the potatoes then take them out slightly under cooked so that they don’t burn when you cook them from frozen). Ensure you give them a gentle shake and toss them lightly half way through cooking to brown evenly
Once cooked you can either: Wait an hour for them to cool and then place them into a freezer bag. Cook from frozen for 30-40 minutes at 200°C until brown and crispy AND/OR – Dispense them into tubs or into a bowl for your party guests to enjoy.
Party tip: Make a really quick dip in 30 seconds to team up with the potato bites. Simply mix a large table spoon of mayonnaise with a tablespoon of tomato sauce and you get a very tasty ‘Marie Rose’ sauce.
