Simple Cupcake Ideas
If you are in a bit of hurry but you need to make up a quick batch of cakes for a Red Nose Day party or cake sale, try our recipe idea below for cupcakes. They can be iced or non-iced, the choice is yours (and how much time you want to spend on them!)
Recipe for the Cupcake (makes 12)
- 75g/3oz Softened Butter (I used Stork)
- 125g/4oz Castor Sugar
- 2 large eggs
- 125g/4oz Plain flour
- 1 teaspoon Baking Powder
Preheat the oven to 160-180°C (160°C is enough for a Fan assisted oven)
Simply cream the butter with the sugar until fluffy. Gradually beat in the eggs. Add the baking powder to the flour and mix well. Sift the flour/baking powder combo into the butter/sugar mixture and fold in gradually and slowly.
Place in the oven for 15-20 minutes until just slightly brown on top. If you are not icing them you can simply make a small slit in the top of the cake and insert half a cherry on the top for the red nose!
To check they are cooked, put a sharp knife through the middle of one of the cakes. If it comes out clean then they are ready! Wait about an hour for them to cool if you are adding the butter icing.
Recipe for the butter icing
- 140g/5oz Softened Butter (or Stork Margarine)
- 280g/10oz Icing Sugar
- 1-2 tablespoons milk
Beat the butter in until soft and sift in half the icing sugar. Blend well until smooth. Sift in the rest of the icing sugar with the milk and beat the mixture until smooth and creamy.
Use a large teaspoon sized amount on each cake and smooth into a swirl design or make peaks for a ‘snowy’ mountain effect
